13 June 2009 What
a show. Started with a very yummy sweet stout by Steve, Followed by
an experimental champagne maker. David raised the topical question of
sterilising bottles - use bleach. We talked about John's super cider,
Brett with his Tawny Port and Scotch and David's Nashi wine - half bottled dry
and half bottled sweeter using potassium sorbate as a stabiliser.

Worked with Cameron this morning. A busy show with
lots of callers from as far away as Sheffield and Penguin. We covered
ginger beer, chilli beer, cider, stout, wheat beer with coriander seeds and
oranges and the old favourite Rhubarb Champagne.

A funny show, where I learned about planting blueberry
plants. We had an old fashioned blackberry wine made in a bowl, followed
by a plum puree... The old favourite rhubarb champagne. Head
retention on an Irish ale - time in the bottle, quality ingredients and clean
equipment as the answer. And lots more.

Loved the iced cider idea - gotta give that a go. Once again the Rhubarb
champagne featured with the twist to elderflower champagne. Busy time of
the year for both of those drinks. I mentioned the beerfest at the regatta
ground and spent the afternoon there talking to people about beer.

It was like wagging school - I shut the shop and went off
to do the show... One day I might be able to leave the door open and leave
the honesty box and tip jar on the counter and people can serve themselves....
?? My, what a busy show... Thankyou Heather for you call to thank me
for inspiring you to make all those wines. I'm glad she's having fun
because making wines/beers yourself and having people enjoy them is great fun!!
We touched on cider vinegar making. Jane needed some start up info for her
hubby to make beer. The good olde ginger beer came up again. I did
my hydrometer nazi thing. We talked about the advantages of plastic
bottles and rhubarb champagne. Rose petal champagne recipe from the
rhubarb recipe and loads more.

This week I had a long conversation about Diatose enzyme
and its effect on beer - reducing the carbohydrate content and making the beer
drier with more alcohol. There was a short mention of harvesting yeast
from a bottle of home brew to start another batch (1/3 cup malt in 500ml water
plus the sediment from a bottle, keep warm). We discovered that wine
should be stored out of the light or in dark bottles. There was also a
debate on the quality of water that we use in brewing - town water v tank water.
I concluded that often the chlorine in the water can slow the rate of
fermentation as the yeast must first get used to the harsh environment, then
breed and then ferment.
3rd November
We covered the old favourites, the ginger beer plant and
rhubarb champagne. I mentioned that now was the perfect time to be
preparing your Christmas bevvies. A caller asked about apple concentrate
he used to buy to make cider and another caller came through with where to but
it - health food shops. I reminded myself that I have to bottle my cider!!
We also covered the lemonchello as orangechello and a quick blackberry recipe.
15th September This week featured
the coffee ale again, some greengage wine and some lemonchello. I spoke
about the use of diatose enzyme for low carbohydrate beers and carbon treatment
for grappa. We also talked about how to make liqueurs with the vast array
of flavours that we provide and whisky you make from vodka.
28th July Started off with
apple cider concentrates, then covered lemon syrup and back to apple wine from
scratch. Distillation and licenses. Talked about the two ways to
make port. Finished with ginger beer plants and a black currant wine
recipe.
9th June
We covered heaters and the effects of temperature on the
yeast. A apple cordial recipe that I promised to make. A coffee ale
- yum!!! Chocolate topping stout.
28th April In this show we
covered topics like Irish strawberry wine, crab apple wine, apple wine from
juice, rose petal champagne and my recently bottled Sauvignon Blanc from a kit!!

This show featured draught beer kits to save bottling and
plum wine.
