After years of nagging, finally people are listening.  So I thought we had better practice what we preach and do the Winter beers now so they get time to mature!!!  We chose the old favourite - Chocolate topping stout!!  Hope it lasts until Winter, 'cause the last one didn't!!!!!  OOOPS.

Morgan's Dockside Stout
1kg Dark Malt Extract
250ml Chocolate Topping
200g Dried Malt Additive
O.G.

Cascade Pale Ale 
1kg Dextrose
500g Light Malt Extract
O.G. 1050
F.G. 1010

Coopers Ginger Beer
Just bottled the Porter and can't afford to leave the barrel empty for too long!!!  Poppit is in charge of this one.  She wants a strong ginger beer for Summer.  I doubt it will make it to Summer!!!! :-)  We will put the brewbelt on this one.
Bottled and labelled on  15/07/04 and can't wait for it to be ready!!!!!!

Cascade Porter
We wanted to do a dark beer with a hint of honey and what better way to trial the long awaited Cascade brew.

Cascade porter    1 can
Light dried malt    1kg
Stringy bark honey    1kg
S.G. 1070 (wow!!) - 20 litres
It will be interesting where this one finishes.
Topped up 12/06/04 so final volume 22.5 litres (we have a black barrel)
So 182g/l in 20 litres = 162g/l in 22.5 litres
S.G. = 1065
Ferment conducted at 14°C!!!!!  This yeast will tolerate the cold.
Perfect for winter brewing and secondary ferment in the bottles.
Bottled 23/06/04 F.G. 1015
Approx alcohol is 1065 - 1015 = 50 x 0.14 = 7%
Tasted after 4 days (As you do!!!!) and tastes great!!!!
Tasted again after 6 days and at 10 days and getting even better....at this rate there will be none left!!!  Poppit has taken 4 bottles home...
