Dry your own apricots

Make up a solution containing 200g of Sodium Metabisulphite and 1 kg of sugar in 10 litres of water. Select firm but ripe fruit, halve them and remove the stones. Place halved fruit into the solution and leave to soak for about 12 hours. Remove from solution, place on mesh racks and put into a sunny spot to dry. Drying will take about 5 days. Fruit will be of good colour and will keep for a long time.
