ALCOHOLIC GINGER BEER
Ginger beer has never had a good reputation. All of us would have a story of blowing up bottles in the shed with an all too volatile brew of Grandma's. Fortunately nowadays there is a remedy. Unlike the plant ginger beer, the kits have a controlled dose of priming sugar that guarantees the bottles will not explode in your cupboard. We recommend using white sugar instead of dextrose as the drink is a fruity style and the sugar helps with this characteristic.
1 can Ginger Beer mix
1 Kg Sugar (3% alcohol) OR 2 Kg Sugar (5% alcohol)
3 teaspoons grated ginger (optional)

Put the grated ginger in 2 cups of water and bring it to the boil. Simmer for 10 minutes. Strain into the fermenter then follow the rest of the T.H.B.S. kit instructions. Try to stir the brew once a day as the ginger beer is thinner than a beer and the yeast will sink to the bottom of the barrel and do nothing. As it is designed to be a cloudy drink we stir the barrel when bottling.
